Tex Mex Lettuce Boats Easy Family Friendly

I am currently obsessed with lettuce boats! I can’t get enough of them, which I think is down to the weather at the moment. I feel like it’s summer so I want to have salad, but in reality, we haven’t seen the sun for weeks and so I am starting to crave something warm and comforting. These strike the perfect balance and can be toned up or down depending on how you’re feeling and they’re a really fun family-friendly meal!

The recipe for these is so easy, and you can go as overboard or as simple as you like depending on what you fancy or more importantly what you have in the fridge and cupboards at home. If you have them, I love to add a few crushed up nachos as these give such a fantastic crunch when you’re eating them! If you’re scaling this up for a dinner party, I’d suggest having loads of toppings laid out on the table so you’re guests can help themselves. This also makes a great salad bowl if you shred up the lettuce. It’s your meal so do what you want with it!

HOW TO MAKE TEX-MEX TURKEY BOATS

SKILL: Mega Easy

TIME: 15 Minutes

SERVES 2-3

INGREDIENTS

For the filling:

500g lean turkey mince

1 onion, finely diced

1 green pepper, cubed

2 garlic cloves, crushed

2 tsp paprika

1 tsp cumin

1 tsp chipotle chilli paste or chilli powder

2 tbs tomato puree

To serve:

1 head of iceberg lettuce, outer leaves removed and then the leaves kept as whole as possible.

Chopped coriander

Jalapenos

Grated cheese

Nachos

Tabasco

Sourcream

METHOD

  1. In a frying pan on medium heat, fry the onion and pepper for about five minutes until soft then add the turkey and brown all over.

  2. While that’s happening, get all of your sides out and ready to go! I think the lettuce is essential, and of course the nachos for crunch, but everything else is totally up to you.

  3. When the turkey is browned, add the garlic and spices and cook for one minute then add the tomato paste and let this cook for a few minutes to caramelise (an important step). Finally, add about 75ml of water and stir through to create a small amount of sauce so it’s nice and juicy. Season to taste.

  4. To serve, spoon some of the tex-mex turkey mixture into the lettuce and garnish how you like. Enjoy!
