10 Spring Salads - DAY 2

Today’s salad is inspired by one that was in the first Hemsley & Hemsley cookbook about 7/8 years ag. I used to be obsessed with it! When then the book came out it was at the height of the ‘clean eating’ movement and EVERYBODY just HAD to have a spiralizer. I got one that is similar to this one from Lakeland which I used quite a lot and then it got relegated to the back of one of my cupboards when the trend died down and it was sadly forgotten about. They were so popular that charity shops said they didn’t want any more donations of spiralizers or Dan Brown books because they simply had too many!

I’m glad I kept hold of mine because it’s recently had a revival and I’m using it to make my salads a bit more interesting adding another dimension. If you don’t have a spiraliser, you can slice the carrots and cucumbers as finely as you can, or use a mandolin which you can buy pretty cheaply or a vegetable peeler.

This sesame cucumber salad is so refreshing and tasty I could eat it every day. You could easily add some rice noodles to this, but I really think it stands up on its own as a really tasty meal. Check out the rest of my salads for spring here.

INGREDIENTS

Serves: 2

For the salad:

2 cucumbers, spiralised or thinly sliced

2 large carrots, spiralized or thinly sliced

6 radishes, sliced

1 red pepper, thinly sliced

3 spring onions, thinly sliced

Small bunch of coriander (roughly 25g)

1tbs sesame seeds, toasted

200g leftover roast chicken, shredded or your favourite protein. Crispy tofu or prawns would work really well here.

For the dressing:

1 tbs Soy sauce or tamari

1 tbs sesame oil

1 tbs honey or agave

Juice of 1 lime

METHOD

  1. To make the dressing mix all of the ingredients together well. I like to use a jam jar for this so I can put on the lid and give it a really good shake.

  2. Add all of the ingredients for the salad into a large bowl except the sesame seeds and pour over the dressing. Toss it all together so it’s well dressed and the ingredients are fully distributed.

  3. Split the ingredients into two bowls (if you have and super long pieces of cucumber you might have to snip them in two to make your life easier) and then top with the sesame seeds and some crispy chilli oil if you like a bit of heat.

  4. Enjoy!
