If you’re asking yourself ‘what are baked oats?’ then I’m guessing you’re not on Tiktok. Baked oats are like cake for breakfast, and what could be better than that? Each month there seems to be a couple of viral food trends on Tiktok, and after *the* feta pasta at the beginning of the month, February’s breakout star is baked outs… the more extravagant the better.

These look like such a treat, but they are really just porridge in disguise with some extra nice toppings and the addition of an egg - so overall a great weekend breakfast for all the family. Using a blender or a food processor makes light work of the preparation, you just need a little more patience as they’re cooked in the oven.

This baked oats for one recipe can easily be doubled or tripled, or you can use it as a base for other flavours. Omit the peanut butter and add vanilla and some choc chips and you have cookie flavour, or add a tablespoon of cacao and you’ve got a chocolate breakfast treat.

INGREDIENTS

Skill: Easy

Time: 30 Minutes

Serves: 1

For the oats:

50g oats (half a cup)

1 medium egg

1 banana

1tsp baking powder

1 tbs honey, maple syrup, date syrup or whatever your sweet syrup of choice is

Pinch of salt

1 tbs peanut butter

2 tsp jam

For the topping:

A handful of raspberries

1 tsp peanut butter, crunchy or smooth.

Salted peanuts

METHOD

  1. Preheat the oven to 180/160fan and lightly grease a small dish. A 5x4 baking dish or an 8oz ramekin is perfect for this.

  2. Add all of the ingredients for the oats except the jam into a blender, and blend until smooth. Pour the batter into the prepared dish (you’ll probably need a spatula to get it all out!) and then put a tsp of jam in one side of the mix and the other teaspoon on the other side and submerge in the batter. Bake for 22-24 minutes in the centre of the oven - just like a cake you can test it’s cooked in the middle by inserting a toothpick into the centre - if there’s batter on the toothpick then pop it back in the oven for another few minutes. Repeat this process until the toothpick comes out clean.

  3. When the oats are cooked, top with the fresh raspberries, peanuts for crunch and a drizzle of your favourite peanut butter. My absolute favourite is Pip & Nut because it is super tasty and comes nice and runny so can drizzle it easily.
