Spinach and Banana ‘Kermit’ Smoothie

I have affectionally called this my ‘Watch Out Kermit’ smoothie for years because of its vibrant green Kermit-like colour. If you’re put off by green smoothies I promise you you’ll love this one as it tastes like banana and almonds - no pungent spirulina here thank you very much. This is great for breakfast, or an afternoon snack when you feel like you need to get something ‘good’ into your day. Packed full of lots of vitamins and minerals I always feel great when I’ve ticked off a couple of my five-a-day before leaving the house.

I’ve had my trusty Nutri Ninja for over 8 years now, and it’s still going strong. I really can’t recommend them enough for their power, ease of use and versatility. I have 3 cups (two large and a small) so I can use one large for blending savoury things and spices and the other two for making smoothies just like this one:

INGREDIENTS

Serves 2

100g Spinach

2 small pitted dates or 1 Medjool date

200ml Coconut Water (you could use water)

1 Frozen Banana

1 tbs Almond Butter

1 tbs Maca

100ml Milk (or milk alternative, I love oat milk in this)

METHOD

  1. Add the spinach to your blender along with the dates and coconut water - if you’re using a Nutri Ninja/Nutribullet this will fill a large cup to the top. Blend these three ingredients thoroughly as dates take a while to fully blend.

  2. Once blended you’ll have plenty more space in the cup so add the rest of your ingredients and give it another good blend.

  3. Enjoy!
