Giant Sharing Cookie Dessert
This is such an easy and delicious dessert to make it's perfect for a dinner party. Please can we all start having dinner parties again they were so much fun and I don’t really understand while we all stopped pre covid.
You don't need any fancy equipment to make this just a bowl a spoon and a pan! The recipe is mega easy so there are no excuses for not giving this a try. If you can't muster up enough people for a dinner party you can reheat chunks of this in the oven or air fryer for a few minutes and it'll be warm and gooey again
How to make a perfect giant sharing cookie dessert
Skill - EASY!
Time - 40 minutes
Serves - 6-8
INGREDIENTS
115g Unsalted butter
1 large egg + 1 egg yolk
60g soft brown sugar
125g granulated sugar
1tsp vanilla bean paste
200g plain flour
2tsp baking powder
1tsp fine salt
150g chocolate chips or chocolate cut into chunks (I LOVE these ones)
1 teaspoon flaky sea salt
METHOD
1 - Preheat your oven to 175/350. Cream together your butter and sugars until nice and fluffy, then add your egg yolk and egg ensuring each is fully incorporated before adding the next. Add in your vanilla and mix.
2 - In a bowl whisk together the dry ingredients and then add that into the wet mixture until just combined - take care not over-mix here you're not trying to work the dough.
3 - Stir through your chocolate chips and then put the mixture into a nonstick pan or a well-greased small skillet pan roughly 6 inches wide. Bake for 25 minutes then check on it - you are looking for the edges to be crisping up nicely the top to be just set at the middle to be nice and gooey. If it looks too wobbly cook for another five minutes or so checking regularly. Finish by sprinkling over some flaky salt.
4 - Serve with your favourite ice cream and let everyone dig in.
